Puff 'n Stuff is looking for a talented, organized, and highly service-driven event professional to join our team as a Front of House Culinary Lead. This is a dual role both managing the client experience in both front and back of house of a full-service off-premise catering venue. This person will work alone on events regularly, but they may also be occasionally responsible for the direction of service, bar, and culinary staff for other events or participate on the culinary team at larger events. The scheduling of this position the majority of the time is 4 am to 4 pm at a premier venue in Central Florida.

 

Basics
*Drive to and from the event in the company vehicle alone

*Work independently to move event equipment from the company vehicle to the event site and back

*Work independently to set up buffets and action stations, beverage stations, and mobile kitchen

*Prepare, heat, plate, and garnish a variety of different food and beverage items according to event order

*Anticipate client needs, keep buffet items replenished and serving area clear and organized through out the day

*Directly communicate with client as well as guests in a polite and informative manner

*Ability to troubleshoot logistical challenges, make decisions on the fly and quickly find alternative solutions to problems


* Be able to regularly lift, move, and carry up to 50lbs including ovens, china, glassware and miscellaneous event items

* Be prepared to work in weather conditions- events can be indoors and outdoors
* Follow safe food handling procedures at all times

 

*This position will also be required to work in other capacities as an Event Supervisor, Lead Culinary, or in other service roles as dictated by business demands.

*Supervise on-site team members, verify attendance, direct unloading and setup of culinary and service work areas
* Coach and encourage team members on shift by giving direct feedback


Qualifications
*3-4 years of Culinary Leadership experience in catering, banquet, or fine dining food and beverage, preferably in high volume, upscale environment.  

*3-4 years of Service experience in catering, banquet, or fine dining food and beverage in a leadership capacity, preferably in high volume, upscale environment.
* Excellent time management, detail oriented with the ability to work on multiple projects simultaneously while maintaining providing an excellent client experience
* Familiar with all cooking and hot and cold holding techniques including, but not limited to, grilling, roasting, and baking for proteins, starches, vegetables for buffets and plated meals
* Excellent with the display and plating of all food items. 

*Must be creative and precise and able to follow the Executive Chef's direction.
* Familiar with health department guidelines

* Must be able to work up to 12 hour shift
* Approved Food Handler certification
* Speak and write English fluently

* Reliable transportation to and from locations throughout Central Florida with a clean driving record.
