Puff'n Stuff is looking a skilled butcher to join our kitchen team to fulfill clients' requests and required specifications for meats, poultry, fish, and game processing.

The kitchen team generally operates between 5 am and 4 pm, depending on the scale and complexity of current and upcoming events.   Since each day brings different events with unique requirements, there is always something interesting going on, and attention to detail is a must to be successful.

Butcher Basics:

  • Inspect, process, weigh, label a variety of cuts of meat, poultry, fish or game for customers in an efficient manner according to timelines set forth to you.

  • Receive deliveries of meat, poultry, fish or game and inspect them to ensure that they adhere to the highest quality standards and are not out of date or temperature and of proper specification; review any discrepancies with chef on duty

  • Use skewers, boning knives, filet knives, slicers, tenderizers, grinders,  twine and other tools and equipment to properly, effectively and efficiently complete tasks

  • Utilize trim for various other processes and outlets in order to maximize overall yield of products; this includes but is not limited to preparing force meats and various charcuterie, stocks and bases and/or family meals

  • Maintain a clean and organized work area in accordance to the standards set forth by the company and in adherence to state laws and regulations

Butcher Required Qualifications:

  • 1-2 years' experience as a butcher
  • High school diploma or equivalent
  • Excellent oral and verbal communication skills
  • Knowledge of food safety
  • Experience in whole animal butchery / knowledge of primal cuts and portioning, understanding time and temperature, various cooking methods including grilling, searing, braising, sous vide, roasting, boling, and others
  • Able to stand for entire shift and move around the work area freely
  • Must be able to lift and carry, push or pull up to 50 pounds
  • Serve Safe or comparable food certification preferred
