JOB TITLE: Production Manager
LOCATION: Puff 'n Stuff - Orlando
REPORTS TO: Executive Chef
Primary Objective/Responsibilities:
To manage and lead the culinary team for the USDA production of grab & go meals for our retail partners.
Primary Job Functions:
- Clear understanding of Food Cost & Inventory
- Clear understanding of Labor Cost & Scheduling
- Proficient in development & purchasing
- Ensure proper temperatures in cases and coolers are maintained, preserved temperature logs are maintained in cooler
- Quality control
- Creates job postings, interviews, and onboards candidates
- Creates training materials and conducts training for all staff
- Conducts performance evaluations and holds staff accountable with disciplinary action
- Provides open communication and feedback
- Sets, monitors, follows up on productivity goals within budget
- Varying schedule to include holidays, weekday, weekends, and extended hours as business demands
- Adhere to all local, state, and federal laws, safety, and food safety regulations
- Use all equipment according to specified guidelines
- Adhere to all company policies and procedures
- Maintain kitchen sanitation in accordance with health department guidelines
- Always maintain safe food handling procedures
- Ordering and maintaining invoices
- Check product quality to ensure freshness, review "sell by" dates taking appropriate action
- Reinforce safety programs by complying with safety procedures and identify unsafe conditions and notify management

Required Qualifications:
- 3 years of leadership experience running a Food & Beverage production operation
- Proficient in all aspects of the English language
- ServSafe & HACCP certification

- Must work well in teams and alone with minimal supervision
- Extensive knowledge of food & catering trends including presentation
- Clear understanding of state regulations with serving food
- Ability to regularly lift, move and carry up to 50lbs.
- Ability to stand or be on feet in a refrigerated environment for long periods
