Overview:
The Steward plays an essential role in our culinary team by ensuring the cleanliness, sanitation, and safety of the kitchen, dish room, storage areas, trash room, kitchen cookware, as well as guest dining ware. You will be focused on optimizing each guest's experience by living out our company purpose of "hospitality from our family to yours".
Responsibilities:
- Prepares sufficient quantities of pantry products in accordance to production plan or forecast needs such as salads, appetizers, sandwich filling and other cold dishes.
- Wraps, dates, and rotates food items.
- Utilizes whole food products eliminating any waste.
- Maintains overall cleanliness and sanitation standards in assigned areas.
- Alerts chef or supervisor of any equipment breakdowns, food overages, or shortages in a timely manner
- Requisitions inventory and receive supplies as necessary for daily production.Ensures proper storage of food items.
- Incorporates safe work practices in job performance.
- Operate and maintain cleaning equipment and tools, including the dish washing machine, hand wash stations pot-scrubbing station, and trash compactor.
- Checks dish machine, drains tank, reassembles the machine, refills the tank and ensures dish machine is ready to operate.
- Wash and disinfect kitchen and store room areas, tables, tools, knives, and equipment.
- Follow correct temperature for washing, rinsing, and pre-soaking of all pots, pans, utensils, plates, glasses, etc.
- Receive deliveries, store perishables properly, and rotate stock.
- Ensure clean wares are stored in appropriate areas.
- Use detergent, rinsing, and sanitizing chemicals in the 3-compartment sink to clean dishes.
- Inspect, pull, and stack cleaned items, send soiled items back for re-scrubbing and re-washing.
- Rack and spray all racked items with hot water to loosen and remove food residue. Sort, soak, and wash/re-wash silverware. Breakdown dirty bus tubs.
- Empty and maintain trashcans and dumpster area.
- Clean and mop all areas in assigned departments.
- Dispose of glass in the proper containers.
- Break down cardboard boxes and place them and other recyclables in the recycle bin.
- Greet each guest that you encounter during your shift with a friendly smile.
- Ensures uniform and personal appearance are clean and professional.
- Follow hotel procedures for reporting and turning in lost and found articles.
- Coordinate with other departments as necessary to resolve service requests or problems.
- Ensure guest and associate safety by following established security procedures including emergency procedures, key security and protecting guest and company confidential information. Follow all company and safety procedures; report accidents, injuries, and unsafe work conditions to manager; and complete safety training and certifications.
Qualifications:
- Must be able to move, lift, carry, push, pull, and place objects weighing less than or equal to 35 pounds without assistance
- Continuously bend, reach, twist and use your hands and arms.
- Stand for extended periods of time and lift up to 35 lbs.
- Ability to work in a fast-pace environment
- Ability to work a flexible schedule to include mornings, days, evenings, weekends and holidays.
